  • 1 medium onion (about 1 cup), thinly sliced
  • 1 tablespoon fresh dill, chopped
  • 1/2 cup (120 ml) heavy cream or half and half
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons chopped chives or scallions (for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C). Press the thawed puff pastry into an 8- or 9-inch tart pan, crimping the edges and trimming excess dough. Refrigerate the crust while preparing the filling.
  2. In a large skillet over medium-high heat, melt the butter and add the chopped bacon. Cook until the bacon is crispy, about 6–8 minutes.
  3. Add the sliced onion to the skillet and sauté for 2–3 minutes until softened and translucent.
  4. Stir in the thinly sliced potatoes and chopped dill. Season with salt and pepper. Cook for 3–5 minutes, stirring gently to coat the potatoes in the bacon drippings. The potatoes do not need to be fully cooked.
  5. Spoon the potato mixture evenly into the chilled pastry crust, spreading it into smooth layers.
  6. Drizzle the heavy cream evenly over the top, allowing it to seep between the potato slices.
  7. Bake on the lower oven rack for 35–45 minutes, or until the crust is golden brown and the potatoes are fork-tender.
  8. Remove from the oven and let the pie rest for 10 minutes before slicing.
  9. Garnish with chopped chives or scallions and serve warm.

  • Use a mandoline slicer to ensure evenly thin potato slices for uniform cooking.
  • Cook the bacon until fully crisp to maintain texture after baking.
  • If the crust browns too quickly, loosely tent the pie with foil.
