Description

Irish Scones are light, fluffy, and buttery baked treats with a tender crumb and golden tops. Made with cold butter and buttermilk, these traditional Irish scones come together in just 30 minutes and are perfect for breakfast or afternoon tea, served with jam, cream, or butter.


Ingredients

  • 3 1/2 cups (440 g) all-purpose flour
  • 1/4 cup (50 g) granulated sugar
  • 1 1/2 tablespoons (16 g) baking powder
  • 1/4 teaspoon (1.5 g) salt
  • 8 tablespoons (113 g) unsalted butter, cold and diced
  • 1 large egg (about 50 g)
  • 3/4 to 1 cup (177240 ml) cold buttermilk, plus 1 tablespoon (15 ml) for brushing


Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold diced butter and cut it into the flour using a pastry cutter or fingertips until the mixture resembles coarse crumbs with pea-sized pieces.
  4. In a separate bowl, whisk together the egg and 3/4 cup (177 ml) of buttermilk.
  5. Pour the wet ingredients into the dry ingredients and gently mix until the dough just comes together, adding additional buttermilk only if needed.
  6. Turn the dough onto a lightly floured surface and gently pat it into a 1-inch (2.5 cm) thick round.
  7. Use a 2 1/2-inch (6 cm) round cutter to cut out scones, pressing straight down without twisting.
  8. Place the scones on the prepared baking sheet and brush the tops with 1 tablespoon (15 ml) of buttermilk.
  9. Bake for 15–20 minutes, or until puffed and golden brown.
  10. Cool slightly before serving warm with butter, jam, or cream.

Notes

  • Keep all ingredients cold to ensure flaky and tender Irish scones.
  • Do not overmix the dough to prevent dense texture.
  • Press the cutter straight down without twisting for better rise.
  • Freeze unbaked scones for up to 2 months and bake from frozen, adding 2–3 minutes to the baking time.
  • Best enjoyed fresh on the day they are baked.
