  • 1/2 cup brown sugar, packed
  • 2 tsp ground cinnamon


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In another bowl, cream softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Beat in eggs one at a time, along with vanilla extract, until fully incorporated.
  5. Gradually add dry ingredients into the wet ingredients until just combined.
  6. In a small bowl, combine brown sugar and cinnamon for the filling.
  7. Roll out half of the dough onto parchment paper, sprinkle with the cinnamon-sugar filling, and roll it up tightly.
  8. Slice the dough into rounds about 1-inch thick and place them on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes, or until golden brown around the edges. Allow them to cool slightly before serving.
