Ingredients

  • 2 tablespoons light corn syrup: used to coat the rim of the glass
  • 1/4 cup sweetened coconut flakes: for a snowy decorative rim and added texture
  • 6 cups ice: creates the frozen base of the mocktail
  • 1 cup pineapple juice: adds a bright tropical flavor
  • 1/2 cup cream of coconut: provides creamy texture and sweet coconut flavor
  • 6 to 8 drops blue food coloring: gives the drink its signature frosty blue color


Instructions

  1. Pour the corn syrup onto a small plate. On a second plate, spread the sweetened coconut flakes.
  2. Dip the rim of each glass first into the corn syrup, then into the coconut flakes to coat. Set aside.
  3. In a blender, combine the ice, pineapple juice, cream of coconut, and 6–8 drops of blue food coloring.
  4. Blend the mixture until smooth and slushy.
  5. If desired, adjust the color by adding more blue food coloring one drop at a time and blending briefly again.
  6. Pour the blended mocktail into the prepared glasses and serve immediately.

Notes

  • Always use cream of coconut, not coconut cream—they are different in texture and sweetness.
  • Crushed ice blends faster and gives a smoother texture.
  • Blue food coloring is optional, but adds the iconic Jack Frost look.
  • To reduce sugar, use unsweetened pineapple juice and adjust sweetness with a sugar substitute.
  • Mocktail is best served fresh, but you can freeze the base and re-blend with ice later.
