Ingredients
- Chicken thighs – 4 pieces
- Buttermilk – 1 cup
- All-purpose flour – 1 1/2 cups

Instructions
- Marinate the chicken thighs in buttermilk and salt for at least 30 minutes or overnight.
- In a shallow dish, combine flour, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
- Remove the chicken from buttermilk, dredge thoroughly in seasoned flour, pressing to coat well.
- Heat about an inch of oil in a heavy-bottomed pan over medium-high heat until shimmering.
- Fry the chicken until golden brown and cooked through, about 4-5 minutes per side, reaching an internal temperature of 165°F.
- While frying, gently warm honey in a small saucepan with chopped pickled jalapeños; do not boil.
- Toast the burger buns until golden brown.
- Assemble by placing fried chicken on the bottom bun, topping with optional pickles and slaw, drizzling generously with jalapeño honey, and closing with the top bun.
