Ingredients

  • Chicken thighs – 4 pieces
  • Buttermilk – 1 cup
  • All-purpose flour – 1 1/2 cups
  • Paprika – 1 teaspoon
  • Garlic powder – 1 teaspoon
  • Onion powder – 1 teaspoon
  • Cayenne pepper – 1/2 teaspoon
  • Salt – to taste
  • Black pepper – to taste
  • Pickled jalapeños – 1/4 cup, chopped
  • Honey – 1/2 cup
  • Burger buns – 4
  • Pickles (optional)
  • Coleslaw (optional)
  • Oil for frying – as needed


Instructions

  1. Marinate the chicken thighs in buttermilk and salt for at least 30 minutes or overnight.
  2. In a shallow dish, combine flour, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
  3. Remove the chicken from buttermilk, dredge thoroughly in seasoned flour, pressing to coat well.
  4. Heat about an inch of oil in a heavy-bottomed pan over medium-high heat until shimmering.
  5. Fry the chicken until golden brown and cooked through, about 4-5 minutes per side, reaching an internal temperature of 165°F.
  6. While frying, gently warm honey in a small saucepan with chopped pickled jalapeños; do not boil.
  7. Toast the burger buns until golden brown.
  8. Assemble by placing fried chicken on the bottom bun, topping with optional pickles and slaw, drizzling generously with jalapeño honey, and closing with the top bun.
