Instructions
- In a saucepan over medium heat, combine jalapeño peppers, chopped onion, and minced garlic. Add 1 cup white vinegar and 1/2 cup water.
- Bring the mixture to a boil, then reduce heat and simmer for 10 minutes until the peppers are soft.
- Remove from heat and let cool slightly.
- Transfer the mixture to a blender. Add 1 teaspoon salt, 1/2 teaspoon cumin, 1 tablespoon honey (if using), and the juice of 1 lime.
- Blend until smooth. If the sauce is too thick, add water a tablespoon at a time until desired consistency is reached.
- Taste and adjust salt and lime juice if needed.
- Optional: Strain through a fine mesh sieve for a smoother texture.
- Pour into sterilized bottles or jars. Seal and refrigerate. Use within 3 to 4 weeks.
