Description

  • 3 medium zucchini
  • 2 tablespoons vegetable oil
  • 1 medium sweet onion (coarsely chopped)
  • 2 tablespoons teriyaki sauce
  • 1 tablespoon soy sauce
  • 1/4 to 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon black pepper
  • 1 teaspoon toasted sesame seeds


Instructions

  1. Cut the zucchinis into 2-inch long pieces and slice each piece into 6 wedges for even cooking.
  2. Heat the vegetable oil in a large nonstick skillet over medium-high heat until shimmering.
  3. Add the zucchini and coarsely chopped sweet onion to the skillet. Sauté for about 2 minutes until they begin to soften.
  4. Stir in the teriyaki sauce, soy sauce, crushed red pepper flakes, and black pepper. Cook for another 4-5 minutes, or until the zucchini reaches your desired tenderness.
  5. Sprinkle the toasted sesame seeds over the zucchini before serving. Enjoy!
