This dish is perfect as a side to grilled meats, tofu, or enjoyed on its own. Its combination of sweet, savory, and slightly spicy flavors makes it a unique addition to any meal.
Ingredients
Scale
- 3 medium zucchini
- 2 tablespoons vegetable oil
- 1 medium sweet onion (coarsely chopped)
- 2 tablespoons teriyaki sauce
- 1 tablespoon soy sauce
- 1/4 to 1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon black pepper
- 1 teaspoon toasted sesame seeds
Instructions
- Cut the zucchinis into 2-inch long pieces and slice each piece into 6 wedges for even cooking.
- Heat the vegetable oil in a large nonstick skillet over medium-high heat until shimmering.
- Add the zucchini and coarsely chopped sweet onion to the skillet. Sauté for about 2 minutes until they begin to soften.
- Stir in the teriyaki sauce, soy sauce, crushed red pepper flakes, and black pepper. Cook for another 4-5 minutes, or until the zucchini reaches your desired tenderness.
- Sprinkle the toasted sesame seeds over the zucchini before serving. Enjoy!
Notes
- Don’t overcook the zucchini; it should be tender but still slightly crisp.
- If you prefer a spicier dish, increase the amount of crushed red pepper flakes or add fresh chili peppers.
- For a gluten-free version, swap soy sauce with tamari sauce.
- Use a nonstick skillet to avoid the zucchini sticking to the pan and for easier cleanup.
