- 1 7oz can of chipotle peppers in adobo sauce
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1/4 cup honey
- 8 cloves garlic
- 1 bunch cilantro
- Juice of 1/2 lime
- 2 teaspoons chipotle powder
- 1 teaspoon chili powder
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 2 teaspoons salt
- 1/2 teaspoon pepper
- Sirloin, flank, or skirt steak
Instructions
- In a blender or food processor, combine chipotle peppers, red wine vinegar, honey, olive oil, lime juice, cilantro, garlic, and spices. Blend until smooth.
- Place the steak in a large bowl and pour the marinade over it, saving 1/4 cup of marinade separately. Marinate for at least 30 minutes.
- Preheat a skillet on high heat. Remove the steak from the marinade, shake off excess, and sear for 3-4 minutes per side for medium-rare.
- Let the steak rest for 5 minutes, then slice thinly against the grain and cut into small cubes.
- Return the cubed steak to the skillet, add 1 tablespoon of reserved marinade, and sauté for 20-30 seconds on high heat.
- Serve immediately with your favorite sides or use in tacos, burritos, or salads.
