  • 12 oz chicken breast, diced
  • 4 slices bacon, diced
  • 1 tablespoon Ranch Seasoning
  • 2 tablespoons butter
  • 4 tablespoons cream cheese
  • 1/2 cup almond milk (or dairy of choice)
  • 1 cup cheddar cheese, shredded (separated in 1/2s)
  • 1/3 cup buffalo sauce


Instructions

  1. Preheat a skillet over medium heat for about 1 minute.
  2. Add chicken, bacon, and ranch seasoning to the skillet, and sauté until golden and crispy. Ensure the chicken reaches an internal temperature of 165°F.
  3. Drain excess grease from the skillet and set chicken and bacon aside.
  4. Reduce the heat to low and add butter, cream cheese, and almond milk to the skillet. Whisk until melted and well combined.
  5. Stir in half of the shredded cheddar cheese and whisk until melted. Gradually increase heat to simmer and add the chicken and bacon back into the skillet.
  6. Drizzle buffalo sauce over the chicken mixture and top with the remaining cheese. Cover and let simmer for about 5 minutes.
  7. Optional: Broil for 1-2 minutes for a crispy, golden top.

  • You can substitute chicken thighs for chicken breasts for a richer, fattier option.
  • For a dairy-free option, use coconut milk instead of almond milk.
