- 1 ½ cups (180g) graham cracker crumbs
- 2 tablespoons (25g) white sugar
- 5 tablespoons (70g) unsalted butter, melted
- 3 large egg yolks
- 1 ⅓ cups (396g) sweetened condensed milk
- ½ cup (120ml) key lime juice (from about 25 key limes)
- 1 tablespoon key lime zest (from about 3 key limes)
- 1 tablespoon full-fat sour cream
- 1 pinch salt
- Whipped cream and lime slices for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture evenly into a 9-inch pie dish using a flat-bottomed cup.
- Place the dish on a baking sheet and bake for 11 minutes. Remove and let cool slightly.
- Reduce the oven temperature to 325°F (160°C).
- In a medium bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, zest, sour cream, and salt until smooth.
- Pour the filling into the baked crust and smooth the top with a spatula.
- Bake for 20 minutes or until the center jiggles slightly but the edges are firm.
- Cool on a wire rack for 2 hours, then refrigerate overnight to set completely.
- Before serving, top with whipped cream and garnish with lime slices if desired.
Notes
- Use fresh key lime juice for the best flavor — bottled juice can be substituted if needed.
- Chill the pie overnight for a firm, creamy texture.
- Do not overbake — the pie should have a slight jiggle in the center when removed from the oven.
- Wrap leftovers tightly and store in the fridge for up to 4 days or freeze for up to 3 months.
