Description

  • 3 eggs
  • 8 oz sour cream
  • ½ cup canola oil
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 1 teaspoon vanilla extract
  • 1 ½ cups flour
  • 2 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 (8 oz) package cream cheese, softened
  • ⅓ cup powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a large bowl, whisk together sugar, eggs, sour cream, lemon zest, lemon juice, vanilla extract, and canola oil until smooth.
  3. In a separate bowl, sift together the flour, baking powder, and salt.
  4. Slowly add the dry ingredients to the wet mixture, stirring until combined. Be careful not to overmix.
  5. In a small bowl, blend softened cream cheese and powdered sugar until smooth.
  6. Pour half of the batter into the loaf pan. Spoon half of the cream cheese mixture on top and swirl gently with a knife.
  7. Top with the remaining batter and cream cheese mixture, swirling gently again to create a marbled effect.
  8. Bake for 65-70 minutes. After 35 minutes, cover with foil to prevent over-browning. The bread is done when a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool completely before slicing and serving.

  • To store leftovers, wrap in plastic wrap and keep at room temperature for up to 3 days, or refrigerate for up to 5 days.
