Instructions

  1. In a large bowl, whip together the heavy cream, vanilla extract, and powdered sugar until stiff peaks form. Set aside.
  2. In another large bowl, beat the cream cheese and lemon curd until smooth and fully combined.
  3. Gently fold the whipped cream into the lemon mixture using a spatula, being careful not to overmix to preserve the fluffiness.
  4. Layer the lemon fluff mixture and smashed raspberries alternately in eight individual jars or dessert cups.
  5. Top each serving with additional whole raspberries and a sprig of fresh mint for garnish.
  6. Refrigerate until ready to serve. Can be made up to 24 hours in advance.
