Description
This Lemon Vinaigrette Salad Dressing is a fresh, zesty, and healthy homemade dressing made with simple ingredients like lemon juice, olive oil, garlic, and herbs. Perfect for salads, roasted vegetables, or as a marinade, it’s quick to prepare and full of citrus flavor.
Ingredients
Scale
- 1/3 cup extra virgin olive oil: adds richness and helps emulsify the dressing
- 1/4–1/3 cup freshly squeezed lemon juice (about 2 lemons): provides the acidic, citrus base
- 2 garlic cloves, minced: adds pungency and depth
- 1 teaspoon dried oregano or thyme: brings herbal flavor
- 1/4 teaspoon salt: enhances the overall taste
- Freshly ground black pepper, to taste: adds mild heat and aroma
- 1 tablespoon honey or sugar (optional): balances tartness with sweetness
- 1/2 teaspoon Dijon mustard (optional): helps emulsify and adds tanginess
Instructions
- In a small bowl, combine freshly squeezed lemon juice, minced garlic, dried herbs, salt, and pepper.
- If using, add honey and/or Dijon mustard to the bowl and whisk together.
- While whisking continuously, slowly drizzle in the extra virgin olive oil until fully emulsified.
- Taste and adjust seasoning as needed.
- Transfer to a sealed container and refrigerate for up to 7 days.
- Before each use, whisk or shake the dressing well. Let it sit at room temperature for 30 minutes if oil solidifies.
Notes
- Use freshly squeezed lemon juice for best flavor—avoid bottled juice.
- Minced shallots can be substituted for garlic for a milder flavor.
- Olive oil may solidify in the fridge—let it warm before serving.
- Fresh herbs can replace dried—use 3x the amount if substituting.
- Dijon mustard improves emulsification but will alter flavor.
