Description

This Lemon Vinaigrette Salad Dressing is a fresh, zesty, and healthy homemade dressing made with simple ingredients like lemon juice, olive oil, garlic, and herbs. Perfect for salads, roasted vegetables, or as a marinade, it’s quick to prepare and full of citrus flavor.

Ingredients

Scale
  • 1/3 cup extra virgin olive oil: adds richness and helps emulsify the dressing
  • 1/41/3 cup freshly squeezed lemon juice (about 2 lemons): provides the acidic, citrus base
  • 2 garlic cloves, minced: adds pungency and depth
  • 1 teaspoon dried oregano or thyme: brings herbal flavor
  • 1/4 teaspoon salt: enhances the overall taste
  • Freshly ground black pepper, to taste: adds mild heat and aroma
  • 1 tablespoon honey or sugar (optional): balances tartness with sweetness
  • 1/2 teaspoon Dijon mustard (optional): helps emulsify and adds tanginess

Instructions

  1. In a small bowl, combine freshly squeezed lemon juice, minced garlic, dried herbs, salt, and pepper.
  2. If using, add honey and/or Dijon mustard to the bowl and whisk together.
  3. While whisking continuously, slowly drizzle in the extra virgin olive oil until fully emulsified.
  4. Taste and adjust seasoning as needed.
  5. Transfer to a sealed container and refrigerate for up to 7 days.
  6. Before each use, whisk or shake the dressing well. Let it sit at room temperature for 30 minutes if oil solidifies.

Notes

  • Use freshly squeezed lemon juice for best flavor—avoid bottled juice.
  • Minced shallots can be substituted for garlic for a milder flavor.
  • Olive oil may solidify in the fridge—let it warm before serving.
  • Fresh herbs can replace dried—use 3x the amount if substituting.
  • Dijon mustard improves emulsification but will alter flavor.
