Description
Leprechaun Bark is a festive no-bake St. Patrick’s Day dessert made with swirled dark and white chocolate, crunchy pretzels, rainbow candy, and colorful sprinkles. This sweet and salty chocolate bark is quick to prepare, easy to customize, and perfect for parties, gifting, or making with kids.

- 8 ounces dark or semi-sweet chocolate bars, broken into pieces
- 4 ounces white chocolate bars, almond bark, or candy melts, broken into pieces
- 1 cup small pretzels
- 1/4 cup St. Patrick’s Day-themed sprinkles
- 1/4 cup rainbow sour candy (such as Airheads), cut into small pieces
- 2 teaspoons coconut oil (optional, for thinning chocolate)
Instructions
- Line a large baking sheet with parchment paper or a silicone baking mat and set aside. Prepare all toppings so they are ready to use.
- Place the dark or semi-sweet chocolate in a microwave-safe bowl and the white chocolate in a separate microwave-safe bowl.
- Melt both chocolates separately in 45-second intervals at 50% power, stirring after each interval, until smooth and fully melted.
- Pour the melted dark chocolate onto the prepared parchment paper and spread it into an even layer about 1/4 inch thick using a spatula.
- Immediately drizzle the melted white chocolate over the dark chocolate layer.
- Use a knife or toothpick to gently swirl the white chocolate into the dark chocolate to create a marbled effect.
- Sprinkle the pretzels, St. Patrick’s Day sprinkles, and rainbow sour candy evenly over the top. Press larger pieces lightly into the chocolate to help them adhere.
- Allow the bark to set at room temperature for about 1 hour, or until completely firm. If needed, refrigerate for 20–30 minutes to speed up setting.
- Once fully set, break the Leprechaun Bark into approximately 24 pieces and store in an airtight container.
Notes
- Use chocolate bars or melting wafers instead of chocolate chips for smoother melting and better texture.
- If the melted chocolate is too thick, stir in up to 2 teaspoons coconut oil to thin it slightly.
- Have all toppings opened and ready before pouring the chocolate, as it sets quickly.
- Store at room temperature in a cool, dry place for up to 1 week, or refrigerate in hot climates.
- For a gluten-free version, substitute gluten-free pretzels.
