Lucky Charms Cookies are soft and chewy sugar cookies packed with colorful Lucky Charms marshmallows. With a buttery base and festive cereal marshmallows folded into the dough and pressed on top, these cookies are perfect for St. Patrick’s Day, parties, or fun family baking.

- 1 cup (226 g) unsalted butter, softened
- 1 1/4 cups (250 g) granulated sugar
- 1 large egg, room temperature
- 2 teaspoons (10 ml) vanilla extract
- 2 1/2 cups (315 g) all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups (about 80 g) Lucky Charms marshmallows, divided
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar for 2–3 minutes until light and fluffy.
- Add the egg and vanilla extract, mixing until fully combined and smooth.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
- Fold in 1 cup of the Lucky Charms marshmallows gently until evenly distributed.
- Scoop the dough into 2-tablespoon (about 40 g) portions and roll into balls. Place them 2 inches apart on the prepared baking sheet.
- Bake for 9–11 minutes, or until the edges are set and the tops are no longer shiny.
- Remove from the oven and immediately press the remaining Lucky Charms marshmallows onto the tops of the warm cookies.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Use softened, not melted, butter to prevent excessive spreading.
- Do not overbake; remove when centers are slightly soft for chewy cookies.
- Reserve marshmallows for topping to maintain bright color and shape.
- Store in an airtight container at room temperature for up to 5 days.
- Freeze unbaked dough balls for up to 3 months and bake from frozen, adding 1 extra minute.
