Description

Lucky Charms Cookies are soft and chewy sugar cookies packed with colorful Lucky Charms marshmallows. With a buttery base and festive cereal marshmallows folded into the dough and pressed on top, these cookies are perfect for St. Patrick’s Day, parties, or fun family baking.

  • 1 cup (226 g) unsalted butter, softened
  • 1 1/4 cups (250 g) granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons (10 ml) vanilla extract
  • 2 1/2 cups (315 g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups (about 80 g) Lucky Charms marshmallows, divided


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar for 2–3 minutes until light and fluffy.
  3. Add the egg and vanilla extract, mixing until fully combined and smooth.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  6. Fold in 1 cup of the Lucky Charms marshmallows gently until evenly distributed.
  7. Scoop the dough into 2-tablespoon (about 40 g) portions and roll into balls. Place them 2 inches apart on the prepared baking sheet.
  8. Bake for 9–11 minutes, or until the edges are set and the tops are no longer shiny.
  9. Remove from the oven and immediately press the remaining Lucky Charms marshmallows onto the tops of the warm cookies.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Use softened, not melted, butter to prevent excessive spreading.
  • Do not overbake; remove when centers are slightly soft for chewy cookies.
  • Reserve marshmallows for topping to maintain bright color and shape.
  • Store in an airtight container at room temperature for up to 5 days.
  • Freeze unbaked dough balls for up to 3 months and bake from frozen, adding 1 extra minute.
