Instructions
- Crush the Ritz crackers using a food processor or by placing them in a zip-top bag and crushing with a rolling pin until finely ground.
- In a mixing bowl, combine the crushed crackers, melted butter, and sugar until well blended.
- Press the cracker mixture into the bottom of a 9×13-inch glass dish, reserving 1/4 cup of the mixture for topping. Chill the crust in the refrigerator.
- In a large bowl, mix the thawed orange juice concentrate with the sweetened condensed milk until smooth.
- Fold in the thawed whipped topping gently until fully incorporated.
- Stir in the drained mandarin oranges, reserving a few for garnish.
- Pour the filling over the chilled crust and spread evenly using a spatula.
- Sprinkle the reserved cracker crumbs on top and decorate with the remaining orange segments.
- Chill in the refrigerator for at least 1 hour before serving.
- Slice with a cold knife and serve chilled.
