  • 28 oz canned mandarin oranges, drained and divided (two 14 oz cans)


Instructions

  1. Crush the Ritz crackers using a food processor or by placing them in a zip-top bag and crushing with a rolling pin until finely ground.
  2. In a mixing bowl, combine the crushed crackers, melted butter, and sugar until well blended.
  3. Press the cracker mixture into the bottom of a 9×13-inch glass dish, reserving 1/4 cup of the mixture for topping. Chill the crust in the refrigerator.
  4. In a large bowl, mix the thawed orange juice concentrate with the sweetened condensed milk until smooth.
  5. Fold in the thawed whipped topping gently until fully incorporated.
  6. Stir in the drained mandarin oranges, reserving a few for garnish.
  7. Pour the filling over the chilled crust and spread evenly using a spatula.
  8. Sprinkle the reserved cracker crumbs on top and decorate with the remaining orange segments.
  9. Chill in the refrigerator for at least 1 hour before serving.
  10. Slice with a cold knife and serve chilled.
