- 1/4 teaspoon dried rosemary, crushed
Instructions
- In a shallow dish, combine gluten-free flour with salt and pepper. Dredge each chicken thigh in the flour, shaking off the excess.
- In a bowl, whisk together chicken broth, chopped pecans, maple syrup, Dijon mustard, apple cider vinegar, Tamari, and rosemary. Set aside.
- Heat olive oil in a 12-inch skillet over medium-high heat. Sear the chicken thighs for 1–2 minutes per side until golden brown. Remove from skillet.
- Remove the skillet from heat and carefully add bourbon. It will bubble rapidly—use caution.
- Return skillet to the heat, pour in the maple sauce, and bring to a simmer.
- Place the chicken thighs back into the skillet. Loosely cover with foil and simmer for 10 minutes, flipping once, until the sauce thickens and the chicken is cooked through.
