- 1 tsp baking powder

- 1 cup dark brown sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract

- 2 large apples (finely chopped)
- 2 Tbsp brown sugar
- 1 Tbsp butter
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 2 Tbsp butter (for glaze)
- 1/4 cup pure maple syrup
- 1/2 cup powdered sugar
- 1/4 tsp vanilla extract (for glaze)
- 1/8 tsp ground cinnamon (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Line an 11×7 pan with tin foil or spray with cooking spray.
- In a medium saucepan, cook apple filling ingredients over medium-low heat for 3-4 minutes. Remove from heat and set aside to cool.
- Cream butter with dark brown sugar and granulated sugar until light and fluffy, about 1 minute.
- Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract and salt.
- In a separate bowl, combine flour, baking powder, and cinnamon. Gradually add this mixture to the wet ingredients, stirring until just combined.
- Spread half of the blondie batter in the prepared pan. Top with apple filling.
- Spread remaining blondie batter over the apples.
- Bake for 25-30 minutes, or until the top is golden brown and a cake tester comes out clean.
- For the glaze, melt butter, maple syrup, vanilla extract, and cinnamon over low heat. Sift in powdered sugar and whisk until smooth. Let cool for 8-10 minutes.
- Pour the glaze over the cooled blondies, allowing it to set before slicing into squares.
Notes
- Make sure to test the blondies with a cake tester before removing from the oven to ensure they are fully cooked.
- The glaze can be thickened by allowing it to cool a bit longer before pouring over the blondies.
- Store leftovers in an airtight container for up to 3 days at room temperature or freeze for up to 2 months.
