Description

Marinated Cheese is a quick and flavorful appetizer made with cubed white cheddar, fresh parsley, garlic, olives, and crushed red pepper flakes, all soaked in olive oil and served over a bed of peppery arugula. It’s a delicious, no-cook recipe ideal for gatherings, cheeseboards, or as a snack.

Ingredients

Scale
  • 1 lb White Cheddar Cheese: creamy, mildly sharp base that absorbs marinade flavors
  • 1/4 cup Fresh Parsley: adds herbaceous brightness and color
  • 1-3 cloves Garlic: provides deep savory aroma and flavor
  • 1 cup Olives: offers briny, salty contrast to the cheese
  • 1/4 cup Olive Oil: carries all the flavors and coats the cheese evenly
  • 1 tsp Crushed Red Pepper Flakes: adds a gentle heat and spice
  • 1 cup Arugula (Rucola) Leaves: peppery greens that balance the rich marinated cheese

Instructions

  1. In a small bowl, mix 1/4 cup chopped parsley, 1-3 crushed garlic cloves, 1 tsp crushed red pepper flakes, and 1/4 cup olive oil to make the marinade.
  2. Cube 1 lb of white cheddar cheese into bite-sized pieces (about 1/2 inch).
  3. In a medium bowl, combine the cubed cheese, marinade mixture, and 1 cup of olives. Toss gently to coat.
  4. Arrange 1 cup of arugula leaves on a serving platter or bowl as the base.
  5. Spoon the marinated cheese and olive mixture over the arugula.
  6. Optionally, let the mixture marinate for 30 minutes to deepen the flavor, then serve at room temperature.

Notes

  • Use high-quality cheddar for best flavor and texture retention.
  • Letting the mixture marinate for several hours enhances the flavor.
  • Serve with crostini, crackers, or alongside charcuterie.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Bring to room temperature before serving for optimal flavor.
