Description

Marinated Olives and Cheese is a quick, flavorful Mediterranean appetizer made with sharp cheddar, a mix of olives, spicy peperoncino, and herbs soaked in a zesty vinaigrette. Perfect for parties, snacks, or holiday spreads.

Ingredients

Scale
  • 1 small red bell pepper, cut into 2-inch pieces
  • 3/4 cup peperoncino, drained
  • 3/4 cup green olives
  • 3/4 cup kalamata olives
  • 6 oz sharp cheddar cheese, cubed
  • 1/3 cup olive oil
  • 1/4 cup white wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried chili flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a small glass bowl, whisk together olive oil, white wine vinegar, oregano, thyme, chili flakes, salt, and pepper until well combined.
  2. In a large mixing bowl, combine the red bell pepper, peperoncino, green olives, kalamata olives, and cheddar cheese.
  3. Pour the marinade over the mixture and stir thoroughly to coat all ingredients evenly.
  4. Cover the bowl and refrigerate for at least 2 hours, or overnight for deeper flavor.
  5. Remove from the refrigerator and bring to room temperature before serving for best flavor and texture.

Notes

  • Adjust marinade proportions to taste—add more vinegar for extra tang or more oil for a smoother bite.
  • Make ahead: This appetizer tastes better the next day after marinating overnight.
  • Use a firm cheese to prevent it from softening too much during marination.
  • Store leftovers in a glass jar with a tight-fitting lid in the fridge for up to 5 days.
