Description

These Marshmallow Rice Bubbles Halloween Brains are a spooky, fun, and easy treat for Halloween parties. With a crispy texture from Rice Bubbles and a sweet, chewy marshmallow base, these treats look just like brains and are sure to surprise your guests!

Ingredients

Scale
  • 85g unsalted butter
  • 6 cups regular marshmallows
  • 4 cups Rice Bubbles (Krispies)
  • 1/2 tsp salt
  • Red food coloring

Instructions

  1. Prepare a Bain-Marie by putting 1/2 cup of water into a small pot and bringing it to a boil. Place a large heatproof bowl over the pot of boiling water.
  2. Place the butter and marshmallows into the heatproof bowl. Stir continuously for 2-4 minutes until the mixture becomes smooth and creamy.
  3. Remove the heatproof bowl from the pot using oven mitts. Add the salt and a few drops of red food coloring to the mixture and stir to combine.
  4. In a large mixing bowl, place the Rice Bubbles. Pour the marshmallow mixture over the Rice Bubbles and stir quickly to coat them evenly with the marshmallow mixture.
  5. Oil your hands and shape the Rice Bubble mixture into ovals. Use a butter knife to gently create a dent in the center of each oval to mimic the appearance of a brain.
  6. Dip a toothpick into the red food coloring and use it to draw veins on each brain shape, giving it a more realistic look.
  7. Allow the shaped brains to cool before storing them in an airtight container for up to one week.

Notes

  • Be quick when mixing the Rice Bubbles with the marshmallow mixture to avoid the marshmallow solidifying.
  • Oiling your hands or using two spoons to shape the mixture will help prevent sticking.
  • Store the marshmallow brains in an airtight container at room temperature for up to one week.
