- 1 small cucumber, quartered, seeds removed, and sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, finely diced
- 1 tablespoon red wine vinegar

- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh herbs (parsley, dill, basil, mint)
- 2 tablespoons sun-dried tomatoes, chopped
- 4 tablespoons extra-virgin olive oil
Instructions
- Macerate the red onion in red wine vinegar for 5-10 minutes to reduce its sharpness.
- In a large bowl, combine the red wine vinegar, honey, salt, black pepper, fresh herbs, sun-dried tomatoes, and olive oil.
- Drain and rinse the chickpeas, and remove excess moisture. Add to the bowl with the dressing.
- Add the sliced cucumber and crumbled feta cheese to the bowl and toss all ingredients together until evenly coated.
- For enhanced flavor, refrigerate the salad for 2 hours before serving. Add the cucumber right before serving to avoid sogginess.
