Description

Melting sweet potatoes are a delicious side dish that combines crispy, caramelized edges with a soft, buttery interior. The sweetness of the sweet potatoes is perfectly balanced with savory herbs and a touch of maple syrup for an irresistible flavor. This dish is versatile and can complement any meal, from a casual dinner to a holiday feast.

Ingredients

Scale
  • 4 medium-sized sweet potatoes (approximately 2 pounds)
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive or avocado oil
  • 1 teaspoon fresh rosemary
  • 1 teaspoon fresh thyme
  • 3 cloves garlic, finely minced
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • Optional: 1/2 teaspoon ground cinnamon
  • Optional: 1/4 cup raw pecans
  • Optional: 3 tablespoons maple syrup

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Wash and dry the sweet potatoes thoroughly.
  3. Slice the sweet potatoes into ½-inch thick rounds.
  4. In a small saucepan, melt the butter and mix with olive oil, rosemary, thyme, garlic, sea salt, and black pepper.
  5. Coat the sweet potato slices evenly with the spiced butter mixture.
  6. Arrange the coated sweet potatoes on a 12×17-inch baking sheet, making sure the pieces are not overcrowded.
  7. Roast the sweet potatoes in the oven for 30-35 minutes, flipping halfway through, until golden and fork-tender.
  8. (Optional) In the last 5-7 minutes of roasting, drizzle with maple syrup for extra flavor.
  9. Serve hot and enjoy!

Notes

  • For extra crispiness, pat the sweet potato slices dry before seasoning.
  • If you prefer a sweeter dish, drizzle additional maple syrup right before serving.
  • Feel free to experiment with other herbs such as thyme or sage for different flavor profiles.
  • Don’t overcrowd the baking sheet to ensure the sweet potatoes roast evenly.
