Description

This Mexican Watermelon Cucumber Salad is a refreshing, healthy, and vibrant side dish that combines the sweetness of watermelon, the crispness of cucumber, and the tang of Tajin. It’s the perfect addition to summer picnics, BBQs, or any meal needing a light and zesty accompaniment.


Ingredients

  • 1/2 personal size seedless watermelon, diced into bite-size pieces
  • 1 English cucumber, sliced thinly into 1/2-inch rounds
  • 1/2 cup hulled pepitas (pumpkin seeds), toasted
  • 1/4 large red onion, diced small
  • 1 tablespoon olive oil
  • 3 tablespoons lime juice
  • 1/2 tablespoon red wine vinegar
  • 1 tablespoon Tajin seasoning blend
  • 2 tablespoons Tajin for garnish
  • Salt and pepper to taste
  • 1/4 cup fresh herbs (cilantro, basil, and/or parsley), chopped


Instructions

  1. Dice the watermelon into bite-sized pieces and place in a colander to drain excess juice.
  2. Toast the pepitas in a dry pan over medium heat for about 5 minutes, stirring occasionally, until golden brown. Set aside to cool.
  3. Slice the cucumber into thin rounds and dice the red onion.
  4. Chop any fresh herbs you’re using, such as cilantro, basil, or parsley.
  5. In a small bowl, whisk together the olive oil, lime juice, red wine vinegar, and 1 tablespoon of Tajin seasoning.
  6. In a large serving bowl, combine the watermelon, cucumber, red onion, and toasted pepitas.
  7. Pour the dressing over the salad and toss gently to combine.
  8. Sprinkle with 1 tablespoon of Tajin, salt, and pepper, and top with fresh herbs.
  9. Serve immediately or refrigerate for up to 3 days. Enjoy!

  • Make sure to drain the watermelon to avoid a soggy salad.
  • Use fresh, firm watermelon for the best texture and flavor.
  • For a spicier salad, add diced jalapeños or extra Tajin.
