Mexican White Trash Casserole

Mexican White Trash Casserole

  1. The Mexican White Trash Casserole is a cheesy, savory dish that combines layers of crushed nacho Doritos, shredded chicken, Ro’tel tomatoes, and taco seasoning. It’s an easy-to-make, comforting meal perfect for weeknights or potlucks.
  • Total Time: 45 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 1 bag Nacho Doritos, crushed
  • 2 cups shredded chicken
  • 2 cups shredded cheese (or more if desired)
  • 1 can cream of chicken soup
  • 1 can Ro’tel tomatoes
  • ½ cup sour cream
  • ½ cup milk
  • ½ package taco seasoning (adjust to your spice level)

Instructions

  1. Preheat Your Oven: Set your oven to 350°F (175°C). While it’s heating up, spray a 2-quart casserole dish with nonstick spray.
  2. Mix the Ingredients: In a large mixing bowl, combine the shredded chicken, cream of chicken soup, Ro’tel tomatoes, sour cream, milk, and taco seasoning. Stir until everything is well combined.
  3. Layer the Casserole: Now for the fun part! Take half of your crushed Doritos and spread them evenly across the bottom of the casserole dish. Next, pour half of your chicken mixture on top of the Doritos. Then, add the remaining crushed Doritos and finish by pouring the rest of the chicken mixture over the top. Sprinkle more cheese on top if you want that extra cheesy goodness!
  4. Bake: Cover the dish with foil and pop it into the oven for 35 minutes. If you like your casserole with a crispier topping, remove the foil during the last 10 minutes of baking.
  5. For Larger Portions: If you’re feeding a crowd or just want some leftovers, double the recipe and use a 9×13 inch pan. Bake for 45 minutes, and voilà – you’ve got a meal that lasts!

Notes

  • Cheese Lovers: Don’t be shy with the cheese! Add an extra cup or two of shredded cheddar or Monterey Jack for that gooey, melty effect.
  • Chicken Options: You can use rotisserie chicken for convenience or any leftover cooked chicken you have on hand.
  • Spice It Up: If you love a kick of heat, add some diced jalapeños or extra taco seasoning.
  • Crunchy Topping: For a crunchy topping, consider adding the crushed Doritos during the last few minutes of baking to keep them crispy.
  • Taco Seasoning: If you’re making this for kids, consider using less taco seasoning for a milder flavor.
