  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces cream cheese (softened)
  • 1/4 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese (sharp cheddar is best)
  • 1/4 cup green onions (sliced)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Crisp the bacon in a pan until golden brown, then chop it into small pieces.
  3. Rinse and pat dry the chicken breasts. Trim any excess fat and arrange them in an even layer in a baking dish.
  4. In a medium-sized mixing bowl, combine the softened cream cheese, mayonnaise, shredded mozzarella, cheddar, green onions, and chopped bacon. Add salt and pepper to taste.
  5. Spread the cheese mixture evenly over the chicken breasts. Top with any remaining cheddar cheese if desired.
  6. Place the baking dish in the oven and bake for 30-40 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  7. Remove from the oven and garnish with additional bacon and green onions before serving.
