Description

Mini avocado toasts are a quick, healthy appetizer made with creamy avocado, feta, walnuts, and everything bagel seasoning on toasted baguette slices.


Ingredients

  • 1 whole grain baguette – sliced
  • 4 large avocados – ripe
  • 1 tablespoon lime juice
  • 1/4 cup feta – crumbled
  • 1/2 cup walnuts – chopped
  • 2 tablespoons everything bagel seasoning


Instructions

  1. Preheat the oven to 350°F and arrange sliced baguette pieces on a baking sheet. Toast for 7 minutes or until crisp.
  2. Cut avocados in half, remove the pits, and scoop the flesh into a bowl. Add lime juice and mash with a fork until smooth but slightly chunky.
  3. Spread mashed avocado onto each toasted baguette slice evenly.
  4. Top each toast with crumbled feta, chopped walnuts, and a light sprinkle of everything bagel seasoning.

Notes

  • You can toast the baguette slices ahead and store them in an airtight container.
  • Add lime juice to avocado to prevent browning if prepping ahead.
