- 1 whole grain baguette – sliced
- 4 large avocados – ripe
- 1 tablespoon lime juice
- 1/4 cup feta – crumbled
- 1/2 cup walnuts – chopped
- 2 tablespoons everything bagel seasoning
Instructions
- Preheat the oven to 350°F and arrange sliced baguette pieces on a baking sheet. Toast for 7 minutes or until crisp.
- Cut avocados in half, remove the pits, and scoop the flesh into a bowl. Add lime juice and mash with a fork until smooth but slightly chunky.
- Spread mashed avocado onto each toasted baguette slice evenly.
- Top each toast with crumbled feta, chopped walnuts, and a light sprinkle of everything bagel seasoning.
Notes
- You can toast the baguette slices ahead and store them in an airtight container.
- Add lime juice to avocado to prevent browning if prepping ahead.
- Swap feta for goat cheese or omit for a dairy-free version.
- Use any type of baguette if whole grain isn’t available.
