Ingredients
Scale
- 16 oz cream cheese, softened: Base for a creamy texture and rich flavor
- 1 cup shredded sharp cheddar cheese: Adds a tangy flavor and structure
- Optional – 1/2 cup goat cheese (replace half of the cheddar): Provides a tangy depth
- 1/2 cup dried cranberries, finely chopped: Brings sweetness and color
- 1/2 cup pecans, toasted and finely chopped: Adds buttery crunch and nutty aroma
- 2 tbsp fresh parsley, chopped: Adds freshness and visual appeal
- 1/2 tsp garlic powder (optional): Introduces a savory note
- 1/2 tsp smoked paprika (optional): Adds a subtle smoky depth
- Crackers, pretzels, or veggie sticks: For serving and dipping
Instructions
- In a mixing bowl, combine softened cream cheese, shredded cheddar (and goat cheese if using), garlic powder, and smoked paprika. Mix until smooth and fully combined.
- Add half of the chopped cranberries, pecans, and parsley to the cheese mixture. Fold gently to distribute evenly.
- Cover the bowl and refrigerate the mixture for 20–30 minutes to firm up.
- Using a small cookie scoop or teaspoon, portion out the chilled mixture and roll into 1-inch balls using your hands. Dampen hands if the mixture sticks.
- In a shallow bowl, mix the remaining cranberries, pecans, and parsley. Roll each cheese ball in the mixture to coat thoroughly.
- Arrange the cheese balls on a serving platter and refrigerate until ready to serve. Pair with crackers, pretzels, or fresh veggies.
Notes
- Toast the pecans for 5–7 minutes at 350°F for enhanced flavor.
- Soak dried cranberries in orange juice for 10 minutes before using to brighten their flavor.
- Chilling the cheese mixture is essential for easy rolling and clean presentation.
- Can be made up to 3 days in advance; store in an airtight container in the fridge.
- Roll in coating just before serving for best texture and crunch.
