Instructions
- Crush the digestive biscuits into fine crumbs using a food processor or rolling pin.
- Melt the butter and mix it with the biscuit crumbs until fully combined.
- Press the mixture firmly into the base of a springform pan and chill in the refrigerator for 30 minutes.
- In a large bowl, beat the cream cheese, icing sugar, and vanilla extract until smooth.
- Whip the double cream in a separate bowl until soft peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Crush the mini eggs and fold them into the cheesecake filling.
- Spoon the mixture onto the chilled base and smooth the top evenly.
- Refrigerate for at least 4–6 hours or overnight until fully set.
- Decorate with extra mini eggs and drizzle melted chocolate before serving.
