Description

Mini Shepherd’s Pie Bites are the perfect party appetizer—packed with savory ground beef, vegetables, and creamy mashed potatoes, all tucked into a flaky pie crust and baked until golden. These bite-sized versions of the classic Irish dish are easy to make, freezer-friendly, and guaranteed to be a crowd favorite.

  • 4 refrigerated pie crusts
  • 1/2 cup onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 3/4 pound ground beef
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons tomato paste
  • 1 cup frozen mixed vegetables
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 cup beef broth
  • 1 1/2 cups mashed potatoes
  • Fresh parsley, for garnish


Instructions

  1. Preheat oven to 375°F (190°C) and grease a standard muffin tin.
  2. Roll out the pie crusts and cut out 3-inch circles (about 6 per crust). Press each into a muffin cup.
  3. Pre-bake the crusts for 8–10 minutes until lightly golden. Let cool slightly.
  4. In a skillet, sauté diced onion and garlic in olive oil for 1–2 minutes.
  5. Add ground beef and cook until browned, breaking it up. Drain excess fat.
  6. Stir in Worcestershire sauce, rosemary, thyme, salt, pepper, tomato paste, and mixed vegetables.
  7. Add butter and let it melt, then sprinkle in flour and stir well.
  8. Pour in beef broth and simmer for 5 minutes until thickened.
  9. Spoon 1–2 tablespoons of meat mixture into each crust shell.
  10. Top each with 1–2 tablespoons of mashed potatoes using a spoon or piping bag.
  11. Broil for 8 minutes or until tops are lightly golden.
  12. Garnish with chopped fresh parsley and serve warm.
