- 4 refrigerated pie crusts
- 1/2 cup onion, diced
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 3/4 pound ground beef
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons tomato paste
- 1 cup frozen mixed vegetables
- 2 tablespoons butter
- 2 tablespoons flour
- 1/2 cup beef broth
- 1 1/2 cups mashed potatoes
- Fresh parsley, for garnish
Instructions
- Preheat oven to 375°F (190°C) and grease a standard muffin tin.
- Roll out the pie crusts and cut out 3-inch circles (about 6 per crust). Press each into a muffin cup.
- Pre-bake the crusts for 8–10 minutes until lightly golden. Let cool slightly.
- In a skillet, sauté diced onion and garlic in olive oil for 1–2 minutes.
- Add ground beef and cook until browned, breaking it up. Drain excess fat.
- Stir in Worcestershire sauce, rosemary, thyme, salt, pepper, tomato paste, and mixed vegetables.
- Add butter and let it melt, then sprinkle in flour and stir well.
- Pour in beef broth and simmer for 5 minutes until thickened.
- Spoon 1–2 tablespoons of meat mixture into each crust shell.
- Top each with 1–2 tablespoons of mashed potatoes using a spoon or piping bag.
- Broil for 8 minutes or until tops are lightly golden.
- Garnish with chopped fresh parsley and serve warm.
