Description

Mint Brownies are rich, fudgy chocolate brownies layered with mint sandwich cookies and topped with melted Andes mints and crushed cookies for the ultimate mint chocolate dessert.


Ingredients

  • 1 (18.4 oz) box fudgy brownie mix
  • 2 large eggs (as required by brownie mix)
  • 1/2 cup vegetable oil (as required by brownie mix)
  • 1/4 cup water (as required by brownie mix)
  • 1 (15.25 oz) package mint sandwich cookies, divided
  • 2 (4.67 oz each) packages Andes mints, unwrapped (about 56 mints total)
  • 1 tablespoon unsalted butter (for greasing pan)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch square baking pan with 1 tablespoon butter.
  2. Arrange approximately 20–24 mint sandwich cookies in a single, even layer on the bottom of the prepared pan. Chop the remaining cookies and set aside.
  3. In a large bowl, prepare the brownie batter by mixing the 18.4 oz brownie mix with 2 large eggs, 1/2 cup vegetable oil, and 1/4 cup water until just combined.
  4. Pour the brownie batter evenly over the cookie layer, spreading gently with a spatula to cover completely.
  5. Bake for 28–32 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  6. Remove the pan from the oven and immediately place the 56 unwrapped Andes mints evenly over the hot brownies.
  7. Return to the oven for 2 minutes to soften the mints, then remove and spread the melted chocolate into a smooth layer using a knife or offset spatula.
  8. Sprinkle the reserved chopped mint cookies evenly over the melted mint layer.
  9. Allow the brownies to cool completely at room temperature for about 1 hour before slicing into 12 squares.

Notes

  • Do not overbake to maintain a fudgy texture.
  • Chill the brownies for 20 minutes before slicing for cleaner cuts.
  • Store in an airtight container at room temperature for up to 1 week.
  • For stronger mint flavor, add 1/4 teaspoon peppermint extract to the batter.
  • You can substitute homemade brownie batter for the boxed mix if preferred.
