Description

Mississippi Mud Potatoes are a rich, cheesy, and comforting Southern-inspired side dish made with diced potatoes, crispy bacon, cheddar cheese, and a creamy garlic-mayo base. It’s baked until golden and topped with fresh green onions — perfect for potlucks, holidays, or hearty family dinners.

Ingredients

Scale
  • 2 1/2 cups diced potatoes: base of the dish, provides texture and heartiness
  • 3/4 cup shredded Cheddar cheese: adds creamy sharpness and a melted topping
  • 1/2 cup crumbled cooked bacon: delivers smoky, salty flavor and crunch
  • 1/2 cup diced onion: gives mild sweetness and aromatic depth
  • 1/3 cup mayonnaise: binds the mixture and adds richness
  • 2 garlic cloves, pressed: enhances flavor with savory aroma
  • Salt and freshly ground black pepper to taste: essential for seasoning
  • 1/4 cup chopped green onions: fresh garnish that adds brightness

Instructions

  1. Preheat oven to 325°F (165°C). Lightly grease an 8×8-inch baking dish with nonstick spray.
  2. In a large mixing bowl, combine diced potatoes, cheddar cheese, crumbled bacon, diced onion, mayonnaise, pressed garlic, salt, and pepper. Mix until well combined.
  3. Transfer the mixture to the prepared baking dish and spread evenly.
  4. Bake uncovered for 1 1/2 hours, or until the potatoes are fork-tender and the top is golden brown.
  5. Remove from oven and garnish with chopped green onions before serving.

Notes

  • Use russet potatoes for the best texture when baked.
  • Dish can be assembled a day ahead and refrigerated before baking.
  • Substitute sour cream or Greek yogurt for mayonnaise if preferred.
  • Let the casserole rest for 5–10 minutes after baking for easier serving.
