Description

Mixed Berry Crisp is a quick and easy dessert made with a medley of fresh or frozen berries, topped with a buttery, crunchy streusel.   • 5 cups mixed berries (strawberries, blueberries, blackberries)
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • ½ teaspoon cinnamon
  • 1 cup all-purpose flour
  • ¾ cup rolled oats
  • ½ cup brown sugar, packed
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and diced
  • Vanilla ice cream (optional, for serving)


Instructions

  1. Preheat the oven to 375°F (190°C) and grease an 8-inch square or 7×11-inch baking dish.
  2. Wash and dry the mixed berries and place them in the prepared baking dish. Sprinkle with granulated sugar, cornstarch, and cinnamon. Toss to coat and set aside.
  3. In a separate bowl, combine flour, oats, brown sugar, and salt. Add the cold diced butter and use a fork or your hands to mix it into the dry ingredients until the mixture resembles coarse crumbs.
  4. Sprinkle the streusel topping evenly over the berry mixture.
  5. Bake for 35-40 minutes, until the topping is golden brown and the berry filling is bubbling.
  6. Let the crisp sit for 5-10 minutes before serving. Serve warm with a scoop of vanilla ice cream, if desired.

Notes

  • Frozen berries can be used in place of fresh berries. Add 3-5 extra minutes to the baking time if using frozen berries.
  • For a gluten-free version, use a gluten-free flour blend and certified gluten-free oats.
  • The topping can be made in advance and stored in the fridge for up to 3 days.
  • Allow the crisp to cool for a few minutes before serving to let the filling set properly.
