Description

  • 1 baguette, sliced
  • ¼ cup olive oil, for drizzling
  • 6 ounces Gruyere cheese, shredded
  • 1 pound crimini (baby bella) mushrooms, finely diced
  • 4 tablespoons unsalted butter
  • 1 cup shallot, finely chopped (~3 medium)
  • 6-8 cloves garlic, finely chopped
  • Dash red pepper flakes
  • Salt and pepper, to taste
  • 1 ½ tablespoons fresh thyme, chopped
  • Fresh parsley, chopped for garnish (optional)


Instructions

  1. Preheat your oven to 375°F. Slice the baguette into 18-20 pieces and drizzle with olive oil. Toast the slices in the oven for 5-7 minutes until golden and crispy.
  2. In a dry pan, sauté the chopped crimini mushrooms over medium heat for 8-10 minutes until the liquid is released and evaporates. Stir occasionally.
  3. Add butter to the pan and melt. Stir in the shallots and cook for about 2 minutes until soft.
  4. Add garlic, red pepper flakes, salt, and pepper, and cook for another 4-5 minutes until fragrant. Stir in the thyme and cook for an additional 1-2 minutes.
  5. Remove crostini from the oven and top with shredded Gruyere cheese. Place under the broiler for 3-5 minutes until the cheese is melted and golden.
  6. Once the cheese is melted, top each crostini with the mushroom mixture and garnish with fresh parsley or microgreens if desired.

Notes

  • Make sure to cook the mushrooms until all excess moisture has evaporated to avoid soggy crostini.
  • For a vegetarian alternative, use a cheese made with microbial enzymes like fontina or Emmental.
