Description

Ingredients

  • 23 ripe nectarines
  • 3 large eggs
  • 1 cup whole milk
  • 1/2 cup sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp lemon zest
  • 1/2 cup all-purpose flour
  • Pinch of salt
  • Unsalted butter for greasing
  • Confectioners’ sugar for dusting


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9-inch round baking dish with butter.
  2. Slice the nectarines and arrange them in a single layer in the greased dish.
  3. In a blender, combine eggs, milk, sugar, vanilla, and lemon zest. Blend until smooth.
  4. Add flour and a pinch of salt, and blend again until fully incorporated.
  5. Pour the batter over the nectarines in the baking dish.
  6. Bake for 35–40 minutes until the clafoutis is puffed and golden. The center should be set and not jiggle.
  7. Let cool slightly. Dust with powdered sugar before serving.
  8. Serve warm or at room temperature.
