Ingredients

Scale
  • 1 cup butter
  • ½ cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups quick cooking oats
  • 1 cup semisweet chocolate chips
  • ½ cup peanut butter

Instructions

  1. Grease a 9-inch square pan to prevent sticking.
  2. In a saucepan, melt the butter over medium heat. Stir in brown sugar and vanilla extract. Add oats and cook for 2-3 minutes, mixing well.
  3. Press half of the oat mixture into the prepared pan to form a base layer.
  4. In a separate saucepan, melt chocolate chips and peanut butter over low heat until smooth.
  5. Pour the chocolate mixture over the oat base, spreading it evenly.
  6. Sprinkle the remaining oat mixture over the chocolate layer, pressing down gently to form a top layer.
  7. Cover and refrigerate for 2-3 hours or overnight to set.
  8. Allow to reach room temperature before cutting into bars.

Notes

  • For a dairy-free option, use coconut oil or plant-based butter.
  • You can substitute honey or maple syrup for the brown sugar for a natural sweetener.
  • Store in an airtight container at room temperature for up to one week or freeze for longer storage.
  • If you prefer a less sweet version, reduce the amount of brown sugar or use a sugar substitute.
