- 1 cup heavy whipping cream
- 2 tbsp molasses

- ½ tsp nutmeg
- Whipped cream, for topping
- Crushed gingerbread cookies, for garnish
Instructions
- In a bowl, combine the gingerbread cookie crumbs and melted butter. Stir until well mixed. Press about 2 tablespoons of the mixture into the bottom of each serving cup to form the crust.
- In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. Add the molasses, ground ginger, cinnamon, and nutmeg, and beat until well incorporated.
- In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Spoon or pipe the gingerbread cheesecake mixture into each cup, on top of the crust. Smooth the tops with a spatula if needed.
- Refrigerate the cheesecake cups for at least 2-3 hours, or until set.
- Before serving, top with whipped cream and crushed gingerbread cookies for garnish.
