  • 3 cups graham cracker crumbs
  • 3/4 cup butter, melted
  • 2 – 8 oz. pkg. cream cheese, room temperature
  • 1 cup granulated sugar
  • 1/3 cup lemon juice
  • 1 cup 2% milk
  • 3.4 oz. box instant lemon pudding
  • 21 oz. can blueberry pie filling
  • 16 oz. tubs frozen whipped topping, thawed


Instructions

  1. Mix graham cracker crumbs with melted butter. Set aside 1/2 cup of the crumbs for the topping. Press remaining crumbs into the bottom of a 13×9-inch dish and refrigerate to set the crust.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add lemon juice and milk, mixing thoroughly. Gradually add dry lemon pudding mix and beat until fully combined. The mixture will be thick.
  3. Drop the lemon mixture by dollops onto the crust and spread evenly. This thickness helps prevent the blueberries from sinking.
  4. Spread the blueberry pie filling evenly over the lemon layer using a spoon to avoid disrupting the layers.
  5. Top with the thawed whipped topping and optional reserved graham cracker crumbs.
  6. Refrigerate for at least 2 hours, preferably overnight, to allow the dessert to set. Serve chilled.
