Ingredients
Scale
- 1/2 cup (113 grams) butter, softened
- 2 cups (480 grams) creamy peanut butter
- 3 1/2 cups (420 grams) powdered confectioners’ sugar
- 1 1/2 teaspoons (7 ml) vanilla extract
- 2 cups (360 grams) chocolate chips or chunks
- 1 tablespoon (14 grams) butter or coconut oil
Instructions
- In a large mixing bowl, combine 1/2 cup softened butter, 2 cups creamy peanut butter, 3 1/2 cups powdered sugar, and 1 1/2 teaspoons vanilla extract. Mix with an electric mixer until smooth and thick.
- Line a 9×13-inch baking dish with parchment paper. Press the peanut butter mixture evenly and firmly into the bottom of the pan.
- In a microwave-safe bowl, combine 2 cups chocolate chips and 1 tablespoon butter or coconut oil. Microwave in 30-second intervals, stirring between each, until smooth (about 1 1/2 minutes).
- Pour the melted chocolate over the peanut butter layer and spread evenly using a spatula.
- Let the bars set at room temperature for 45–60 minutes, or refrigerate for 15–20 minutes. Slice before the chocolate fully hardens to avoid cracks.
- Use the parchment to lift the bars from the pan and cut them into squares or triangles. Wipe the knife clean between cuts for clean edges.
Notes
- Use regular creamy peanut butter like Jif or Peter Pan for best texture—avoid natural peanut butter.
- Generic butter brands like Aldi or Great Value are preferred over high-moisture brands like Land O’Lakes.
- Cut bars before chocolate fully sets to avoid cracking.
- Store in an airtight container in the fridge for up to 1 month or freeze for up to 4 months.
- Add-ins like Rice Krispies or graham cracker crumbs can change texture and flavor.
