- 1 1/2 cups water
- 1/4 cup active sourdough starter
- 1 1/2 tsp salt
- 1 tbsp olive oil (optional)
Instructions
- In a large bowl, mix together flour, water, salt, and sourdough starter until a sticky dough forms.
- Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rest at room temperature for 12 to 18 hours, allowing it to rise and ferment.
- Once the dough has fermented, turn it out onto a lightly floured surface. Gently fold the dough over itself a few times to shape it into a round loaf.
- Place the dough on a piece of parchment paper and cover it with a towel. Let it rise for another 1 to 2 hours, until it has puffed up.
- Preheat your oven to 450°F (230°C). Place a Dutch oven with its lid inside the oven while it heats up.
- Once the oven is preheated, carefully remove the Dutch oven and transfer the dough into it, using the parchment paper to lift it.
- Cover the Dutch oven with its lid and bake for 30 minutes.
- After 30 minutes, remove the lid and bake for an additional 15 to 20 minutes until the bread is golden brown and sounds hollow when tapped.
- Allow the bread to cool completely before slicing to set the crumb.
Notes
- If the dough is too sticky, resist adding too much flour. A wetter dough yields a better crumb.
- To test if the bread is done, tap the bottom of the loaf. It should sound hollow when fully baked.
- For longer storage, freeze slices of the bread. It keeps for up to 3 days at room temperature in a paper bag or bread box.
