- 450g chicken breast, cut into chunks
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 225g brown mushrooms, sliced
- 240ml chicken broth
- 240ml sour cream (full-fat)
- 30g all-purpose flour
- 1 tablespoon Dijon mustard
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Cooked egg noodles or rice, for serving
Instructions
- Season the chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
- Add the chopped onion to the same skillet and cook until translucent, about 3 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms soften and brown, about 5 minutes.
- Sprinkle flour over the mushroom mixture and stir constantly for about 1 minute. Gradually pour in the chicken broth, stirring until the sauce thickens. Add the sour cream, Dijon mustard, and paprika. Mix well to combine.
- Return the chicken to the skillet and simmer for another 5 minutes, allowing the flavors to meld and the chicken to heat through. Adjust seasoning with salt and pepper.
- Serve over cooked egg noodles or rice. Garnish with fresh parsley.
