Description

A creamy, zesty, and low-carb one-pan chicken dish made with lemon, parmesan, and herbs. Perfect for weeknight dinners or keto meal prep.


Ingredients

  • 1 lb chicken breasts (4 thin fillets)
  • 1 tbsp Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp butter (divided)
  • 3 cloves garlic, minced
  • 3/4 cup white wine or chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 tbsp lemon juice


Instructions

  1. Preheat oven to 350°F.
  2. Season both sides of the chicken with Italian seasoning, salt, and pepper.
  3. In an oven-proof skillet, melt 1 tablespoon of butter over medium heat and sear the chicken for 2–3 minutes on each side until golden. Remove and set aside.
  4. Deglaze the skillet with wine or broth, scraping the bottom, and let it reduce for 5–6 minutes.
  5. Add remaining butter and garlic. Cook until fragrant, then stir in heavy cream, parmesan, and lemon juice. Cook until the sauce thickens.
  6. Return the chicken to the skillet, spoon sauce over each fillet.
  7. Transfer skillet to oven and bake for 20 minutes, or until the chicken is cooked through.
  8. Serve hot with extra sauce and optional garnish like parsley or capers.
