- 1 tbsp butter
- 1 lb boneless, skinless chicken breast (cubed)
- 1 yellow onion, diced
- 8 oz (1/2 lb) penne pasta (uncooked)
- 15 oz can fire-roasted diced tomatoes (with juices)
- 2 cups chicken broth
- 2 oz cream cheese
- 3 green onions, sliced
Instructions
- In a small bowl, combine the smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne pepper, black pepper, and salt to make the Cajun seasoning.
- Cut the chicken breast into 1/2 to 3/4-inch cubes and toss them in the Cajun seasoning until evenly coated.
- Heat olive oil and butter in a deep skillet over medium-high heat until hot and foamy.
- Add the seasoned chicken to the skillet and cook for 2-3 minutes per side, just until browned. The chicken doesn’t need to be fully cooked yet.
- Add the diced onion and sauté for about 2 more minutes until softened and fragrant.
- Stir in the uncooked penne pasta, fire-roasted diced tomatoes with juice, and chicken broth. Mix well.
- Cover the skillet, bring to a boil, then reduce heat to medium-low. Let it simmer for about 10 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.
- Add the cream cheese in small chunks and stir until fully melted into the sauce.
- Top with sliced green onions and serve hot.
