  • 1/4 tsp salt
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 lb boneless, skinless chicken breast (cubed)
  • 1 yellow onion, diced
  • 8 oz (1/2 lb) penne pasta (uncooked)
  • 15 oz can fire-roasted diced tomatoes (with juices)
  • 2 cups chicken broth
  • 2 oz cream cheese
  • 3 green onions, sliced


Instructions

  1. In a small bowl, combine the smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne pepper, black pepper, and salt to make the Cajun seasoning.
  2. Cut the chicken breast into 1/2 to 3/4-inch cubes and toss them in the Cajun seasoning until evenly coated.
  3. Heat olive oil and butter in a deep skillet over medium-high heat until hot and foamy.
  4. Add the seasoned chicken to the skillet and cook for 2-3 minutes per side, just until browned. The chicken doesn’t need to be fully cooked yet.
  5. Add the diced onion and sauté for about 2 more minutes until softened and fragrant.
  6. Stir in the uncooked penne pasta, fire-roasted diced tomatoes with juice, and chicken broth. Mix well.
  7. Cover the skillet, bring to a boil, then reduce heat to medium-low. Let it simmer for about 10 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.
  8. Add the cream cheese in small chunks and stir until fully melted into the sauce.
  9. Top with sliced green onions and serve hot.
