Ingredients
- Smoked sausage, sliced
- Red bell pepper, diced
- Green bell pepper, diced
- Yellow onion, diced
- Garlic, minced
- Long grain white rice
- Chicken broth

Instructions
- Heat olive oil in a large, deep skillet or Dutch oven over medium heat. Add sliced sausage and cook until browned on both sides.
- Add diced onions and bell peppers to the pan. Sauté for about 5 minutes, until the vegetables begin to soften and onions turn translucent.
- Stir in minced garlic and Cajun seasoning. Cook for about 30 seconds to bloom the spices.

- Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes without lifting the lid.

- Fluff the rice with a fork, adjust seasoning if necessary, and let it rest for a few minutes before serving.
