- 3 cups (90 g) fresh spinach
- 1 cup (100 g) grated Parmesan cheese
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add minced garlic and sliced mushrooms, sautéing for about 5 minutes until fragrant and tender.
- Pour in the chicken or vegetable broth and heavy cream. Stir well and bring the mixture to a gentle boil.
- Add the linguine or fettuccine pasta, ensuring it is mostly submerged in the liquid.
- Reduce heat to medium-low and cook for 10–12 minutes, stirring occasionally, until the pasta is al dente and the liquid has reduced.
- Stir in the fresh spinach and cook for 2–3 minutes until wilted.
- Add grated Parmesan cheese and stir continuously until melted and the sauce becomes creamy.
- Season with salt, black pepper, and red pepper flakes if desired. Adjust seasoning to taste.
- Remove from heat, garnish with fresh parsley and extra Parmesan, and serve immediately.
