  • 4 cups (960 ml) chicken or vegetable broth
  • 2 cups (480 ml) heavy cream
  • 1 pound (450 g) linguine or fettuccine pasta
  • 3 cups (90 g) fresh spinach
  • 1 cup (100 g) grated Parmesan cheese
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add minced garlic and sliced mushrooms, sautéing for about 5 minutes until fragrant and tender.
  2. Pour in the chicken or vegetable broth and heavy cream. Stir well and bring the mixture to a gentle boil.
  3. Add the linguine or fettuccine pasta, ensuring it is mostly submerged in the liquid.
  4. Reduce heat to medium-low and cook for 10–12 minutes, stirring occasionally, until the pasta is al dente and the liquid has reduced.
  5. Stir in the fresh spinach and cook for 2–3 minutes until wilted.
  6. Add grated Parmesan cheese and stir continuously until melted and the sauce becomes creamy.
  7. Season with salt, black pepper, and red pepper flakes if desired. Adjust seasoning to taste.
  8. Remove from heat, garnish with fresh parsley and extra Parmesan, and serve immediately.
