- 1 teaspoon chili powder
Instructions
- Cook the Bacon: In a medium skillet over medium heat, cook the diced bacon until it turns crispy and golden. Once done, transfer the bacon to a paper towel-lined plate to drain, leaving about ¼ cup of the bacon grease in the skillet to enhance flavor.
- Caramelize the Onions and Peaches: Add the finely diced onion and peaches to the reserved bacon grease in the skillet. Reduce the heat to medium-low and cook, stirring occasionally, until the onions become caramelized and the peaches soften, about 15-20 minutes. If the mixture starts sticking, add a splash of water.
- Combine the Ingredients: Stir in the minced garlic, brown sugar, apple cider vinegar, maple syrup, and chili powder. Mix everything well, allowing the flavors to meld before adding the crispy bacon back into the skillet.
- Simmer to Perfection: Keep the heat low and let the mixture simmer for about 15-20 minutes, stirring occasionally, until it reaches a thick, jam-like consistency. If it thickens too much, add a tablespoon of water to loosen it. If it’s too thin, let it cook a bit longer.
- Cool and Store: Once the jam reaches the perfect consistency, remove it from the heat and let it cool. Store it in an airtight container in the refrigerator for up to two weeks or freeze for up to three months. Warm slightly before serving if needed.

- Bacon Options: Thick-cut bacon works best, but any variety will do. For a different twist, try using smoked or peppered bacon.
- Peach Substitutes: If fresh peaches aren’t available, use canned (drained) or frozen peaches. Adjust the cooking time as needed.
- Make It Spicy: Add red pepper flakes, cayenne, or smoked paprika for a spicy kick.
