- 5 peaches, peeled, cored, and sliced (about 4 cups)
- 3/4 cup granulated sugar
- 1/4 teaspoon salt
- 6 Tablespoons butter
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- Ground cinnamon (for sprinkling)
Instructions
- Preheat oven to 350°F (175°C). Slice butter and place it in a 9×13-inch baking dish. Place the dish in the oven while it preheats to melt the butter. Once melted, remove from the oven.
- In a saucepan, add the sliced peaches, sugar, and salt. Cook on medium heat until the sugar dissolves and releases juices from the peaches. Remove from heat.
- In a large bowl, mix together the flour, sugar, baking powder, and salt. Stir in the milk until combined.
- Pour the batter into the prepared pan with the melted butter. Smooth the batter into an even layer.
- Spoon the peaches and their juice over the batter. Sprinkle generously with cinnamon.
- Bake for 38-40 minutes or until the top is golden brown and bubbly. Remove from the oven and let it cool slightly before serving.
- Serve warm with a scoop of vanilla ice cream if desired.
Notes
- For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
- If you prefer a lower glycemic index, try using coconut sugar instead of granulated sugar.
- Leftovers can be stored in the fridge for up to 4-5 days. Reheat in the microwave or oven at 350°F for about 20 minutes.
- If you prefer using canned peaches, skip steps 1 and 2 and use canned peaches in syrup or juice.
- If the top is browning too quickly, cover it with aluminum foil during the last 10 minutes of baking.
