Description

Ingredients

  • 5 peaches, peeled, cored, and sliced (about 4 cups)
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 6 Tablespoons butter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • Ground cinnamon (for sprinkling)


Instructions

  1. Preheat oven to 350°F (175°C). Slice butter and place it in a 9×13-inch baking dish. Place the dish in the oven while it preheats to melt the butter. Once melted, remove from the oven.
  2. In a saucepan, add the sliced peaches, sugar, and salt. Cook on medium heat until the sugar dissolves and releases juices from the peaches. Remove from heat.
  3. In a large bowl, mix together the flour, sugar, baking powder, and salt. Stir in the milk until combined.
  4. Pour the batter into the prepared pan with the melted butter. Smooth the batter into an even layer.
  5. Spoon the peaches and their juice over the batter. Sprinkle generously with cinnamon.
  6. Bake for 38-40 minutes or until the top is golden brown and bubbly. Remove from the oven and let it cool slightly before serving.
  7. Serve warm with a scoop of vanilla ice cream if desired.

Notes

  • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
  • If you prefer a lower glycemic index, try using coconut sugar instead of granulated sugar.
  • Leftovers can be stored in the fridge for up to 4-5 days. Reheat in the microwave or oven at 350°F for about 20 minutes.
  • If you prefer using canned peaches, skip steps 1 and 2 and use canned peaches in syrup or juice.
  • If the top is browning too quickly, cover it with aluminum foil during the last 10 minutes of baking.
