Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
- Beat the softened butter and granulated sugar together in a large mixing bowl until light and fluffy.
- Add the vanilla extract and mix until well incorporated.
- Gradually add the flour and salt, mixing until just combined.
- Fold in the finely chopped pecans gently.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them 2 inches apart.
- Bake for 15-18 minutes, or until the bottoms of the cookies are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes.
- While still warm, roll each cookie in powdered sugar until fully coated.
- Transfer to a wire rack to cool completely. After cooling, roll them in powdered sugar again for a second coating.
- Store in an airtight container at room temperature for up to a week.
