Ingredients

  • 1/2 cup butter (cut into 8 pieces)
  • 1 teaspoon coarse black pepper
  • 1/2 cup all-purpose flour
  • 4 cups pan drippings or chicken stock


Instructions

  1. In a large saucepan, melt 1/2 cup butter over medium-low heat.
  2. Sprinkle in 1 teaspoon coarse black pepper and stir it into the butter.
  3. Slowly add 1/2 cup of all-purpose flour, whisking constantly to combine.
  4. After a few minutes, once the flour is incorporated, slowly add in the 4 cups of pan drippings or chicken stock, whisking continuously.
  5. Continue to whisk until all the liquid has been added, then allow the gravy to simmer for several minutes until thickened.
  6. Serve immediately or keep warm on low heat until ready to serve.

Notes

  • To avoid lumps, whisk constantly when adding the flour and liquid.
  • If the gravy is too thick, add more chicken stock or drippings to reach your desired consistency.
  • This gravy can be made ahead of time and reheated. Store leftovers in an airtight container in the fridge for up to 3 days.
