- 1 pound pork breakfast sausage (mild or hot)
- 1 1/2 cups prepared pimento cheese (such as Palmetto brand)
- 2 cups Bisquick or similar baking mix
- 1/4 teaspoon red pepper (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly spray with non-stick spray.
- In a large mixing bowl, combine the uncooked sausage and pimento cheese using clean hands or a stand mixer until evenly mixed.
- Add the Bisquick and optional red pepper to the bowl, mixing until the dough is thick and sticky. If needed, add more Bisquick to firm it up.
- Roll the mixture into 1-inch balls and place them evenly on the prepared baking sheet. A small cookie scoop helps maintain uniform size.
- Bake for 20–25 minutes, or until golden brown and fully cooked through. Cut one open to ensure the center is no longer pink.
Notes
- If the mixture is too sticky, chill it for 10–15 minutes before rolling.
- Use hot sausage and jalapeño pimento cheese for a spicier version.
- You can freeze unbaked sausage balls for later and bake straight from the freezer, adding a few extra minutes to cook time.
